Spicy Chicken And Vegetable Stir Fry

Believe me when I say this spicy chicken and veggie stir fry packs a punch and is bursting with flavor!
This spicy chicken stir fry is high protein and low fat. This stir fry is delicious eaten over cauliflower rice, white rice or simply add more vegetables to make it a complete low-carb meal!
This is a quick and easy stir-fry that’s perfect for a main course. This is one of my go-to recipes for meal prepping!
Making this dish is easy and simple. But it’s truly fantastic all over – full of taste, light on effort, and just delicious. I think you’re going to enjoy it!
Ingredients
- 1 – 1 1/2lb skinless boneless chicken breasts
- 1 red onion
- 2 bell peppers
- 1 red pepper
- 1 jalepeno pepper
- 2 cans water chestnuts
- 1 4oz can of diced jalepenos.
- 1 tbsp extra virgin olive oil
- light sodium soy sauce to taste
- Spice Mix:
- 1 tsp paprika
- 1 tsp garlic powder or garlic salt
- 1/2 tsp salt
- 1 tsp onion powder
- ½ tsp oregano
- 1 tsp ground red pepper
- 1 tsp ground black pepper
- Optional:
- 2/3 c cauliflower rice
Instructions
- Cut the chicken breasts into bite size pieces (1 inch).
- Place the chicken in a mixing bowl and season with the spice blend.
- Use tongs to evenly coat the chicken pieces.
- Set the bowl aside.
- Cut the onion and peppers into bite sized pieces.
- Slice the jalepeno.
- Heat ½ tbsp of extra virgin olive oil in a medium non-stick frying pan over medium heat.
- Add the onion to the pan.
- In a separate large non-stick frying pan, add the chicken pieces and can of diced jalepenos.
- Add the peppers and fresh, sliced, jalepeno to the onion frying pan and cook, stirring periodically, for about 5 minutes or until tender.
- Add 1 can of water chestnuts to the veggie pan and one to the chicken pan.
- Meanwhile, saute the chicken, stirring periodically, for 5-10 minutes, or until the chicken is cooked through.
- Put the veggies into the chicken pan and mix.
- Let stand on low heat for a few minutes.
- Serve on top of optional cauliflower rice.
- Add low sodium soy sauce to taste.
- Serve with white rice if you’re not watching carbs.
